Fujiyama has been in Prescott, AZ since April 30th 1994. After many years "Mama-san" and "Papa-san" sold it to Ryan, who operated it for some years.
After a stint as a Teppanyaki Chef in California, Tony came to work for the then-current owner Ryan, studying the operation and meeting the clientele. Then, in 2006, Bao and Tony Vang purchased the restaurant and have been building the business ever since. Today Tony, Bao, their three kids and seven family members support the restaurant.
Fresh fish is delivered three times per week, and according to the distributor, Fujiyama is the busiest Japanese restaurant in northern Arizona.
In late 2019, Tony and Bao built up a new restaurant in the Frontier Village Mall, and moved the restaurant into a spacious new room. The decor is sleek and stylish with all new furniture, excellent lighting and an all-wood sushi bar. Fujiyama now has one of the nicest rooms in town, with much greater capacity. "It's also a LOT more work to maintain", laughs Tony.
For many years, Tony and Bao have put in in thirteen hour days, overseeing every aspect of the operation. Now, Tony has pulled back a bit, but he's behind the sushi bar almost every night with the team (or working in the back).
The virus pandemic of 2020 only paused the Fujiyama operation. And, as the economy has returned, Fujiyama is busier than ever. "We see as much carry-out as dine-in business", says Tony.
"I'm quite happy with how things have worked out", says Tony. "I have a great business, a happy family and excellent customers who are also family members. I'm really pleased that my oldest son Ryan is now working with me behind the sushi bar."
